Easiest. Recipe. Ever.



So I am going to assume everyone has cravings for pumpkin during the fall season like I do.  As soon as it starts getting cold I just want to drink hot chocolate and bake muffins, bread, and cookies.Anyways, on Sunday we were going to celebrate my dad's birthday as a family.  I wanted to make him some kind of dessert he would enjoy and would be mostly healthy.  I found this recipe and tweaked it.  The result: delicious, cake like cookies.  I made some with and without chocolate chips.  You'll have to try it and let me know what you think.

Pumpkin Cookies/Muffins:*
*You can use this recipe for cookies or muffins. Depends on what you're in the mood for.
Ingredients:
  • 1 box of spice cake mix
  • 15 oz of canned pumpkin
  • 1/4 tsp. nutmeg
  • 1/4 tsp. cinnamon (Or you can use a 1/2 tsp. of pumpkin pie spice instead of the nutmeg and cinnamon)
  • Chocolate Chips (Optional)
Directions:
  1. Preheat oven to 325 degrees.
  2. Open and empty the contents of the cake mix and can of pumpkin.
  3. Mix it together until there are no clumps of cake mix.
  4. Add the cinnamon, nutmeg, and chocolate chips.
  5. Grease muffin tins or cookie sheets.  Since there is no oil in the batter it's important that you don't forget this step.  
  6. Bake cookies for 9-12 minutes depending on the oven and your pan.  Bake muffins for 12-15 minutes depending on the above things as well.
  7. Once cooked to texture you desire, remove and let them cool completely before storing them.
  8. Eat as many as you want.

  1. They sound so yummy! I've been gathering recipes from cookbooks and putting them in a notebook with other favorite recipes. I'm going to have to add this too!

Big News!

So this is big news for the Power family. I know many of you know a million other people who are currently pregnant but before you roll your eyes and skip over this post completely (ha), read on and hear a little bit about our story. I am currently 20 weeks pregnant. We just found out yesterday that we are expecting a baby girl. She is due to enter this world on January 3, 2012. So far she is healthy and growing strong. She is growing about a week ahead of schedule. Maybe she'll come early...like before the end of the year. Derek and I will celebrate our 3rd anniversary on the 16th of January...so not too long after our sweet girl is born. Tot School: Week 1

A couple of weeks ago I was talking to some of my friends about starting some kind of regular class where we can get our kids together once a week to learn and play. As an added bonus, we all get to chat as well. That night I started researching different activities that are good for kids ages 18 months-3 years. I put together an 8 week schedule that will include different themes each week so that our children can be exposed to many different things. I couldn't wait to get started. I e-mailed my friends my ideas/schedule and once I knew who could participate I went shopping to pick up supplies. Everything I have needed so far I found at the Dollar Tree and Micheal's.
